Diet menus have played an important role in our lives as they influence the different cultures around the turn of the millennium, as well as the foods that have long been consumed at the local and regional levels. The recipe for traditional dishes is always part of the history of each region.
To start this list straight, I just need to talk about Nihari.
This dish is truly a game changer for me when it comes to Pakistani cuisine and Traditional Food of Pakistan. I would easily look at this among the best breakfasts I have ever had anywhere in the world.
Nihari starts as a heap of dry spices fried in vegetable oil and animal fat. The meat ingredients are included (usually beef) and a very healthy portion of Desi Ghee (homemade, clear butter on site). The pot that can be boiled is then completely stirred in a radiant pot.
The texture is sown and thick, so full of super-soft pieces of meat that literally flow in desi ghee. It has a deep red color from the spice and infusion of ghee.
Eaten from shared wardrobes, you garnish Nihari from a side plate of fragrant sliced ginger, spicy green chili and squeezed from fresh lime or two.
In Lahore you can try Nihari on Waris Nihari and in Karachi I would highly recommend Javed Nihari.
the Sajji is a popular Pakistani dish that originated in the province of Balochistan and Traditional Food of Pakistan. It consists of marinated, skewers and roast lamb or chicken. The meat is usually marinated in salt, but it can also be combined with green papaya paste or filled with potatoes and rice.
It is common for the whole chickens to be roasted over an open fire so that the burning wood gives the meat a smoky flavor. When properly cooked, the meat should be crispy on the outside but still juicy and tender on the inside, and consumers often squeeze lemon juice over the meat before eating.
I’m going to start with Khadda Dumba, as this seems to be the most original dish of all and Traditional Food of Pakistan. This specialty is not very common and you rarely find it abroad. There isn’t much information online either. It is actually slow-cooked meat, usually lamb.
The process is quite interesting, as shown in the image above. The lamb hangs in two iron bars all over the earth. There is charcoal underneath and it is then covered with another piece of iron so that the heat is inside and the lamb is cooked. The result is extremely tender meat.
We had the opportunity to try it while in Islamabad and really enjoyed it. The restaurant was called Bolan Saltish and it is located in the Blue Area. They usually prepare it on Saturday. Another recommended place to try it is Epice.
Pakistani cuisine may seem meaty, but it is full of great vegetarian dishes. The word “tarka” refers to the process used to make a lentil dish,
When the lentils have been carefully cooked, tarka is applied – onions, cumin seeds and crushed garlic cloves are fried until brown in a special pan and added to the dough without stirring. It should make a burning sound when the tar mixture ends up in the lentils.
Haleem is an incredibly good dish made with a mixture of barley, local wheat varieties and chana (chickpeas). This dish shows the influence on Pakistan that comes from the Middle East and people have enjoyed Haleem here for centuries.
Slow cooking, up to a whole day, at very low temperatures is a technique used to give Haleem a warm, home-made taste.
Onions (especially fried), mint leaves, both green and dry chili and then some masala spices go into the mother pot and the final decoration comes from a generous squeeze of lemon juice at the end.
This is a great Traditional Food of Pakistan to have in the morning or early for lunch. It is very rich, full of calories to keep the energy up all day. The taste in a good bowl of haleem can be so rich that simply eating it with rot and then sipping on a few cups of milk or green tea can leave you perfect and satisfied.
